Cheesy Pork and Black Bean Chalupas

Ingredients

  • 12 corn tortillas
  • 1 Tbsp olive oil
  • 1 (8-oz) block pepper-Jack cheese, shredded
  • 1 (15-oz) can black beans, drained and rinsed
  • Reserved cooked pork (from Slow-Cooked Garlic and Oregano Pork recipe), chopped
  • 1 (16-oz) container fresh salsa
  • 1 (8-oz) pkg shredded lettuce
  • 2 avocados, chopped

Instructions

  1. Preheat oven to 400°F. Place tortillas on baking sheets, and brush with oil.
  2. Bake 8 to 10 minutes or until crisp; sprinkle with cheese, and bake 1 minute longer or until melted.
  3. Meanwhile, stir together beans and pork in a bowl; cover and microwave until thoroughly heated.
  4. Top tortillas with pork mixture. Place 2 on each plate, and top with salsa, lettuce, and avocado.
