One Dish Dinner
Pork and Bean Loaded Nachos
Ingredients
- 1 (12-oz) bag tortilla chips
- 1 (15-oz) can black beans, drained and rinsed
- 1 (15-oz) can pinto beans, drained and rinsed
- 3 cups shredded cooked pork (from Slow-Cooked Chili Pork Roast recipe)
- 1 (8-oz) block pepper-Jack cheese, shredded
- 4 cups arugula
- ½ (16-oz) container fresh salsa
- 1 (8-oz) cartonsour cream
- 2 avocados, chopped
- 2 green onions, chopped
Instructions
- Preheat oven to 350°F. Spread chips on a large rimmed baking sheet lined with foil. Spread beans over chips. Top with pork and cheese.
- Bake 10 to 15 minutes or until cheese is melted and beef is thoroughly heated.
- Top with arugula, salsa, sour cream, avocado, and green onions.
