Pork and Bean Loaded Nachos

Ingredients

  • 1 (12-oz) bag tortilla chips
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can pinto beans, drained and rinsed
  • 3 cups shredded cooked pork (from Slow-Cooked Chili Pork Roast recipe)
  • 1 (8-oz) block pepper-Jack cheese, shredded
  • 4 cups arugula
  • ½ (16-oz) container fresh salsa
  • 1 (8-oz) cartonsour cream
  • 2 avocados, chopped
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 350°F. Spread chips on a large rimmed baking sheet lined with foil. Spread beans over chips. Top with pork and cheese.
  2. Bake 10 to 15 minutes or until cheese is melted and beef is thoroughly heated.
  3. Top with arugula, salsa, sour cream, avocado, and green onions.
