Creamy Avocado Alfredo

Ingredients

  • 12 oz whole wheat fusilli pasta
  • 2 avocados, coarsely chopped
  • 3 Tbsp fresh lemon juice
  • 2 cloves garlic
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ½ cup pasta water.
  2. Process avocados, lemon juice, garlic, salt, and pepper in a food processor until smooth.
  3. Combine avocado mixture, pasta, and pasta water, if needed, in a Dutch oven. Cook over medium heat 5 minutes or until thoroughly heated. Sprinkle with cheese before serving.

Side Dish Ingredients

  • 2 pints organic grape tomatoes
  • 2 Tbsp olive oil
  • ⅓ cup pesto

Side Dish Instructions

  1. Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 8 minutes or until tomatoes begin to soften and burst; transfer to a bowl. Toss with pesto.
