Creamy Avocado Alfredo
Pesto-Tomato TossIngredients
- 12 oz whole wheat fusilli pasta
- 2 avocados, coarsely chopped
- 3 Tbsp fresh lemon juice
- 2 cloves garlic
- ½ tsp salt
- ½ tsp pepper
- 1 cup freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving ½ cup pasta water.
- Process avocados, lemon juice, garlic, salt, and pepper in a food processor until smooth.
- Combine avocado mixture, pasta, and pasta water, if needed, in a Dutch oven. Cook over medium heat 5 minutes or until thoroughly heated. Sprinkle with cheese before serving.
Side Dish Ingredients
- 2 pints organic grape tomatoes
- 2 Tbsp olive oil
- ⅓ cup pesto
Side Dish Instructions
- Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 8 minutes or until tomatoes begin to soften and burst; transfer to a bowl. Toss with pesto.
