Citrusy Kale, Sweet Potato, and Quinoa Salad

Ingredients

  • 2 (16-oz) pkg peeled, cubed sweet potatoes
  • 2 Tbsp olive oil
  • ½ tsp salt
  • 1 cup quinoa
  • 2 cups low-sodium chicken broth
  • 1 (12-oz) pkg tangy citrus kale salad kit (such as Nature's Green)  
  • 1 (4-oz) log goat cheese, sliced

Instructions

  1. Preheat oven to 450°F. Toss potatoes with oil and salt on a rimmed baking sheet. Bake 25 minutes or until tender, stirring after 15 minutes.
  2. Meanwhile, cook quinoa according to package directions, substituting broth for water.
  3. Prepare salad kit according to package directions. Stir potatoes and quinoa into salad. Divide among 6 plates; top with cheese.
