Citrusy Kale, Sweet Potato, and Quinoa Salad

Ingredients
- 2 (16-oz) pkg peeled, cubed sweet potatoes
- 2 Tbsp olive oil
- ½ tsp salt
- 1 cup quinoa
- 2 cups low-sodium chicken broth
- 1 (12-oz) pkg tangy citrus kale salad kit (such as Nature's Green)
- 1 (4-oz) log goat cheese, sliced
Instructions
- Preheat oven to 450°F. Toss potatoes with oil and salt on a rimmed baking sheet. Bake 25 minutes or until tender, stirring after 15 minutes.
- Meanwhile, cook quinoa according to package directions, substituting broth for water.
- Prepare salad kit according to package directions. Stir potatoes and quinoa into salad. Divide among 6 plates; top with cheese.
