Peanut Butter Sandwich Cookies
Ingredients
- 1 cup sugar
- 1 cup creamy peanut butter
- 1 large egg, lightly beaten
- 1 tsp vanilla extract
- 9 Tbsp chocolate-hazelnut spread
Instructions
- Preheat oven to 350°F.
- Stir together sugar, peanut butter, egg and vanilla using a wooden spoon until well blended.
- Use a 1 Tbsp measuring spoon to scoop dough, and shape into 1-inch balls to make 18 total.
- Place on ungreased baking sheets, and bake 9 to 11 minutes or until set.
- Cool on baking sheets 3 minutes.
- Remove to cooling racks to cool completely, about 20 minutes.
- Spread 1 Tbsp chocolate-hazelnut spread over the flat side of one cookie; top with another cookie.
- Repeat procedure with remaining cookies and spread.
