Peanut Butter Sandwich Cookies

Ingredients

  • 1 cup sugar
  • 1 cup creamy peanut butter
  • 1 large egg, lightly beaten
  • 1 tsp vanilla extract
  • 9 Tbsp chocolate-hazelnut spread

Instructions

  1. Preheat oven to 350°F.
  2. Stir together sugar, peanut butter, egg and vanilla using a wooden spoon until well blended.
  3. Use a 1 Tbsp measuring spoon to scoop dough, and shape into 1-inch balls to make 18 total.
  4. Place on ungreased baking sheets, and bake 9 to 11 minutes or until set.
  5. Cool on baking sheets 3 minutes.
  6. Remove to cooling racks to cool completely, about 20 minutes.
  7. Spread 1 Tbsp chocolate-hazelnut spread over the flat side of one cookie; top with another cookie.
  8. Repeat procedure with remaining cookies and spread.
