Chicken with Garlic-Herb Sauce

Ingredients

  • 1 Tbsp chopped fresh rosemary
  • 2 tsp chopped fresh thyme
  • 4 cloves garlic, minced
  • 1½ lb boneless, skinless chicken breasts
  • 4 Tbsp butter, divided
  • ⅓ cup chicken broth

Instructions

  1. Stir together rosemary, thyme, and garlic.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
  3. Melt 2 Tbsp butter in a large nonstick skillet over medium-high heat. Add chicken, and cook 3 minutes per side or until browned. Remove from skillet; keep warm.
  4. Add rosemary mixture and broth to skillet, scraping skillet to loosen browned bits. Return chicken to skillet; cover and cook 4 to 5 minutes or until chicken is done. Stir in 2 Tbsp butter until melted.

Side Dish Ingredients

  • 2 cups long-grain white rice
  • 1 Tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Steam rice according to package directions; toss with oil, Italian seasoning, and salt and pepper to taste.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
