Chicken with Garlic-Herb Sauce
Herbed Rice and Steamed Green BeansIngredients
- 1 Tbsp chopped fresh rosemary
- 2 tsp chopped fresh thyme
- 4 cloves garlic, minced
- 1½ lb boneless, skinless chicken breasts
- 4 Tbsp butter, divided
- ⅓ cup chicken broth
Instructions
- Stir together rosemary, thyme, and garlic.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
- Melt 2 Tbsp butter in a large nonstick skillet over medium-high heat. Add chicken, and cook 3 minutes per side or until browned. Remove from skillet; keep warm.
- Add rosemary mixture and broth to skillet, scraping skillet to loosen browned bits. Return chicken to skillet; cover and cook 4 to 5 minutes or until chicken is done. Stir in 2 Tbsp butter until melted.

- 2 cups long-grain white rice
- 1 Tbsp olive oil
- 1 tsp Italian seasoning
- 1 (12-oz) pkg frozen green beans

- Steam rice according to package directions; toss with oil, Italian seasoning, and salt and pepper to taste.
- Steam green beans according to package directions; season with salt and pepper to taste.
