Grilled Chicken with Pistachio Romesco Sauce

Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • 3 red bell peppers, halved
  • 3 Roma tomatoes, halved
  • ¼ cup olive oil, divided
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 4 cloves garlic, peeled
  • ⅓ cup roasted, salted shelled pistachios
  • 3 Tbsp sherry vinegar
  • 1 Tbsp smoked paprika

Instructions

  1. Preheat grill to medium-high heat. Brush chicken, red bell peppers, and tomatoes with 2 Tbsp oil; sprinkle with ½ tsp each salt and pepper.
  2. Grill chicken, covered, 4 to 5 minutes per side or until done. Grill bell peppers and tomatoes, covered, 1 to 3 minutes per side or until well marked.
  3. Process peppers, tomatoes, garlic, nuts, vinegar, paprika, 2 Tbsp oil, and ½ tsp each salt and pepper in a food processor or blender until smooth.
  4. Slice chicken, and serve with sauce.

  • 1 (8.5-oz) pouch microwavable seven whole-grains mix (such as Seeds of Change)
  • 1 (5-oz) pkg arugula
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • ¼ cup thinly sliced red onion
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook whole-grains mix according to package directions. Transfer to a bowl; toss with arugula and remaining ingredients.
