Grilled Chicken with Pistachio Romesco Sauce
Whole Grains with White Beans and ArugulaIngredients
- 6 (6-oz) boneless, skinless chicken breasts
- 3 red bell peppers, halved
- 3 Roma tomatoes, halved
- ¼ cup olive oil, divided
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 4 cloves garlic, peeled
- ⅓ cup roasted, salted shelled pistachios
- 3 Tbsp sherry vinegar
- 1 Tbsp smoked paprika
Instructions
- Preheat grill to medium-high heat. Brush chicken, red bell peppers, and tomatoes with 2 Tbsp oil; sprinkle with ½ tsp each salt and pepper.
- Grill chicken, covered, 4 to 5 minutes per side or until done. Grill bell peppers and tomatoes, covered, 1 to 3 minutes per side or until well marked.
- Process peppers, tomatoes, garlic, nuts, vinegar, paprika, 2 Tbsp oil, and ½ tsp each salt and pepper in a food processor or blender until smooth.
- Slice chicken, and serve with sauce.

- 1 (8.5-oz) pouch microwavable seven whole-grains mix (such as Seeds of Change)
- 1 (5-oz) pkg arugula
- 1 (15-oz) can cannellini beans, drained and rinsed
- ¼ cup thinly sliced red onion
- 2 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook whole-grains mix according to package directions. Transfer to a bowl; toss with arugula and remaining ingredients.
