Pork Tenderloin with Warm Plum Salsa

Ingredients

  • 2 (1-lb) pork tenderloin
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 3 Tbsp olive oil, divided
  • 1 (8-oz) pkg chopped red onions
  • 3 cloves garlic, minced
  • 6 plums, cut into thin wedges
  • 2 Tbsp brown sugar
  • 2 Tbsp apple cider vinegar
  • 2 tsp chopped fresh rosemary

Instructions

  1. Preheat oven to 425°F. Sprinkle pork with ½ tsp each salt and pepper.
  2. Cook pork in 1 Tbsp oil in a cast-iron or other ovenproof skillet over medium-high heat 5 minutes on all sides or until browned. Transfer to oven, and bake 10 to 15 minutes or until a meat thermometer reads 145°F.
  3. Meanwhile, cook onion and garlic in 2 Tbsp hot oil in a large saucepan over medium-high heat 2 to 3 minutes or until tender. Add plums, sugar, vinegar, rosemary, and ¼ tsp each salt and pepper; cook 2 to 3 minutes or until tender.
  4. Slice pork, and serve with salsa.

  • 2 lb Broccolini, trimmed
  • 2 Tbsp olive oil
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet. Bake 12 to 15 minutes or until browned and tender.
