Pork Tenderloin with Warm Plum Salsa
Roasted Salt-and-Pepper Broccolini
Ingredients
- 2 (1-lb) pork tenderloin
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 3 Tbsp olive oil, divided
- 1 (8-oz) pkg chopped red onions
- 3 cloves garlic, minced
- 6 plums, cut into thin wedges
- 2 Tbsp brown sugar
- 2 Tbsp apple cider vinegar
- 2 tsp chopped fresh rosemary
Instructions
- Preheat oven to 425°F. Sprinkle pork with ½ tsp each salt and pepper.
- Cook pork in 1 Tbsp oil in a cast-iron or other ovenproof skillet over medium-high heat 5 minutes on all sides or until browned. Transfer to oven, and bake 10 to 15 minutes or until a meat thermometer reads 145°F.
- Meanwhile, cook onion and garlic in 2 Tbsp hot oil in a large saucepan over medium-high heat 2 to 3 minutes or until tender. Add plums, sugar, vinegar, rosemary, and ¼ tsp each salt and pepper; cook 2 to 3 minutes or until tender.
- Slice pork, and serve with salsa.

- ½ tsp kosher salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet. Bake 12 to 15 minutes or until browned and tender.
