Sausage-Stuffed Zucchini Boats

Walnut-Spinach Whole-Grain Pilaf

Ingredients

  • 3 zucchini, halved lengthwise
  • 1 Tbsp water
  • ½ (8-oz) pkg sliced baby portobello mushrooms
  • 1 Tbsp olive oil
  • ½ lb ground turkey sausage
  • ½ (8-oz) pkg chopped onion (about ½ cup)
  • ½ (24-oz) jar roasted garlic marinara sauce 
  • ½ cup shredded Italian-blend cheese
  • ¼ cup panko breadcrumbs (preferably whole wheat)

Instructions

  1. Preheat broiler. Place zucchini, cut sides down, in a 13- x 9-inch baking dish; add water. Cover with plastic wrap; microwave at HIGH 5 to 6 minutes or until fork-tender.
  2. Scoop out zucchini pulp, leaving ¼-inch-thick shells. Chop pulp.
  3. Meanwhile, cook mushrooms in hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned; remove from skillet.
  4. Add sausage and onion to skillet; cook 5 to 6 minutes or until browned and crumbly. Stir in mushrooms and sauce; cook 3 minutes or until thoroughly heated.
  5. Stir in zucchini pulp. Spoon sausage mixture into zucchini shells, and place on a rimmed baking sheet.
  6. Sprinkle with cheese and panko; coat with cooking spray. Broil 2 to 3 minutes or until cheese is melted and panko is golden.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable seven whole-grains mix (such as Seeds of Change)
  • ¼ cup chopped red onion
  • ½ Tbsp minced garlic
  • 1 Tbsp olive oil
  • ¼ cup chopped walnuts
  • ¼ cup sliced roasted red pepper
  • ½ (5-oz) pkg baby spinach, torn
  • ⅛ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Microwave whole-grains mix according to package directions.
  2. Meanwhile, cook onion and garlic in hot oil in a large nonstick skillet over medium-high heat 3 to 4 minutes or until tender. Add nuts; cook 1 to 2 minutes.
  3. Stir in grains mix, roasted pepper, spinach, salt, and pepper; cook 1 minute or until spinach is wilted.
