Skillet Barbecue Chicken Thighs with Crunchy Apple Slaw

Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 Tbsp olive oil
- ¾ cup spicy barbecue sauce (such as Stubbs)
- ½ (16-oz) pkg tricolor coleslaw
- 1 apple, thinly sliced (such as Fuji)
- ¼ cup olive-oil mayonnaise
- 1 Tbsp apple cider vinegar
- 1 tsp honey
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Cook chicken in hot oil in a large nonstick skillet over medium-high heat until done. Add barbecue sauce to skillet; cook 1 to 2 minutes or until sauce is thoroughly heated and chicken is well coated.
- Stir together coleslaw, apple, mayonnaise, vinegar, honey, salt, and pepper. Serve coleslaw with chicken.
