Skillet Barbecue Chicken Thighs with Crunchy Apple Slaw

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 Tbsp olive oil
  • ¾ cup spicy barbecue sauce (such as Stubbs)
  • ½ (16-oz) pkg tricolor coleslaw
  • 1 apple, thinly sliced (such as Fuji)
  • ¼ cup olive-oil mayonnaise
  • 1 Tbsp apple cider vinegar
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Cook chicken in hot oil in a large nonstick skillet over medium-high heat until done. Add barbecue sauce to skillet; cook 1 to 2 minutes or until sauce is thoroughly heated and chicken is well coated.
  2. Stir together coleslaw, apple, mayonnaise, vinegar, honey, salt, and pepper. Serve coleslaw with chicken.
