Turkey Taco Burgers

Corn on the Cob and Jicama-Orange Salad

Ingredients

  • ½ lb lean ground turkey
  • 1 clove garlic, minced
  • ½ tsp ground cumin
  • ¼ tsp paprika
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup shredded part-skim mozzarella cheese
  • ¼ cup fresh salsa

Instructions

  1. Preheat grill  or grill pan to medium-high heat.
  2. Combine ground turkey, garlic, cumin, paprika, salt and pepper; shape into 2 patties.
  3. Cook patties 5 minutes per side or until done, topping with cheese during last 1 minute of cooking. Top burgers with salsa.

Side Dish Ingredients

  • 2 ears of corn, in husks
  • ¼ tsp salt
  • 1 cup matchstick-cut jicama (see Note)
  • 1 navel orange, peeled and sectioned
  • 1 tsp canola oil
  • 1 tsp lime juice
  • ¼ tsp sugar

Side Dish Instructions

  1. Microwave corn, in husks and on damp paper towels, at HIGH 10 to 12 minutes.
  2. Cut about 1½-inches off the base of the cob. Grab husks and silks at the top and squeeze until the corn slides out. Sprinkle ⅛ tsp salt over corn.
  3. Combine jicama, orange, oil, juice, sugar and ⅛ tsp salt; toss.
  4. Serve corn and salad alongside burgers.
