Super Simple Pork Chops

Mashed Sweet Potatoes and Sweet-Tangy Coleslaw

Ingredients

  • 2 (5-oz) bone-in pork loin chops
  • 2 tsp canola oil
  • ¼ tsp dried sage
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Rub pork chops with oil; sprinkle with sage, salt and pepper.
  2. Heat a large nonstick skillet over medium-high heat; add pork chops.
  3. Cook 4 to 5 minutes per side or until pork chops are done.

Side Dish Ingredients

  • 1⅓ cups prepared mashed sweet potatoes
  • 2 cups angel hair coleslaw mix
  • 2 tsp canola oil
  • 2 tsp apple cider vinegar
  • 1 tsp sugar
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Place potatoes in a microwave-safe bowl; microwave at HIGH 2 to 3 minutes or until thoroughly heated, stirring once halfway through cooking.
  2. Meanwhile, combine coleslaw, oil, vinegar, sugar, salt and pepper; toss.
  3. Serve potatoes and slaw alongside pork chops.
