Stir-Fried Chicken with Peanuts
Cilantro RiceIngredients
- 2 tsp peanut oil
- 1 lb skinless, boneless chicken breast halves, cut into 1-inch pieces
- ¼ cup honey-roasted peanuts
- 2 tsp minced fresh ginger
- 4 cloves garlic, minced
- ¼ cup sliced green onions
- 1 Tbsp soy sauce
- 2 tsp rice vinegar
- 1 tsp toasted sesame oil
- 1 cup fresh cilantro leaves
- 4 cups shredded napa cabbage or 2 cups hot cooked brown rice
- Lime wedges (optional)
Instructions
- In a large heavy skillet heat peanut oil over medium-high. Add chicken; cook and stir 2 minutes. Add peanuts, ginger, and garlic; cook and stir 3 minutes or until chicken is no longer pink.
- Add green onions, soy sauce, rice vinegar, and sesame oil to the skillet. Cook and stir 2 minutes more. Remove from heat. Stir in the cilantro. Serve chicken mixture over cabbage. If desired, top with additional cilantro and serve with lime wedges.

- 1 (14.5-oz) can reduced-sodium chicken broth
- ¾ cup uncooked long grain brown rice
- 2 cloves garlic, minced
- 2 Tbsp chopped fresh cilantro
- ¼ cup thinly sliced green onion tops
- ½ tsp finely shredded lime zest
Side Dish Instructions
- In a large saucepan combine broth, rice, and garlic. Bring to boiling; reduce heat. Simmer, covered, 40 to 45 minutes or until rice is tender and liquid is absorbed. Remove from heat. Let stand, covered, 5 minutes. Stir in cilantro and green onion tops; sprinkle with lime zest.
