Honey Grilled Chicken

Lemon-Pepper Broccoli Rice

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 2 Tbsp Dijon mustard
  • 2 Tbsp honey
  • 1 tsp salt
  • ½ tsp dried thyme
  • ½ tsp pepper

Instructions

  1. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand.
  2. Combine oil, mustard, honey, salt, thyme, and pepper in a zip-top plastic bag; add chicken. Seal bag, and chill at least 1 hour or up to 24 hours.
  3. Preheat grill or grill pan to medium-high heat. Remove chicken from marinade; discard marinade.
  4. Grill chicken, covered, 5 to 6 minutes per side or until done. Let stand 5 minutes; slice.

Side Dish Ingredients

  • 1½ cups long-grain white rice
  • 2 broccoli crowns, chopped (or use 1 [10-oz] pkg frozen chopped spinach)
  • 1 tsp lemon-pepper seasoning
  • 2 Tbsp olive oil (or use butter)

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook broccoli in boiling water 3 to 5 minutes until just tender; drain well.
  3. Sauté broccoli and lemon-pepper in hot oil in a large saucepan 1 to 2 minutes; stir in rice, and season with salt and pepper to taste.
