One-Pot Cheeseburger Dumpling Dinner

Ingredients

  • 1 Tbsp butter
  • ½ (16-oz) pkg gnocchi (see Note)
  • ½ lb ground beef
  • ¼ cup chopped onion
  • 1 (14.5-oz) can diced tomatoes, drained
  • ⅓ cup chicken broth
  • 1 tsp Worcestershire sauce
  • 1 cup shredded Cheddar cheese

Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Add gnocchi, and cook 3 to 4 minutes or until toasted. Remove from skillet.
  2. Cook beef and onion in skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  3. Stir in tomatoes, broth, Worcestershire, and gnocchi. Bring to a boil, reduce heat, cover, and simmer 10 minutes or until gnocchi is tender. Stir in cheese.

Side Dish Ingredients

  • ½ lb green beans, trimmed and halved
  • ¼ cup water
  • 1 Tbsp butter
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 2 slices bacon, cooked and crumbled

Side Dish Instructions

  1. Place beans and water in a large saucepan.Bring to a boil over high heat. Cover and cook 2 minutes.
  2. Uncover, and stir in butter. Cook 1 minute or until water evaporates and beans are tender. Sprinkle with salt, pepper, and bacon.
