Teriyaki Chicken Thighs

Asparagus-Shiitake Mushroom Stir-Fry

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 6 Tbsp teriyaki sauce, divided
  • 1 Tbsp Montreal steak seasoning

Instructions

  1. Preheat broiler. Arrange chicken on a lightly greased large foil-lined baking sheet. Drizzle 2 Tbsp teriyaki sauce over chicken, turning several times to coat. Sprinkle both sides of chicken with seasoning.
  2. Broil 6 to 7 minutes per side or until done. Drizzle with ¼ cup teriyaki sauce.

Side Dish Ingredients

  • 1 lb asparagus, cut into 1-inch pieces
  • 1 (8-oz) pkg sliced shiitake mushrooms (or use button mushrooms)
  • 2 Tbsp dark sesame oil
  • 1 clove garlic, minced
  • ½ tsp kosher salt
  • ½ tsp crushed red pepper

Side Dish Instructions

  1. Sauté asparagus and mushrooms in hot oil a large nonstick skillet over high heat 4 minutes or until crisp-tender. Stir in garlic, salt, and pepper. Cook 1 minute.
