Teriyaki Chicken Thighs
Asparagus-Shiitake Mushroom Stir-Fry
Ingredients
- 2 lb boneless, skinless chicken thighs
- 6 Tbsp teriyaki sauce, divided
- 1 Tbsp Montreal steak seasoning
Instructions
- Preheat broiler. Arrange chicken on a lightly greased large foil-lined baking sheet. Drizzle 2 Tbsp teriyaki sauce over chicken, turning several times to coat. Sprinkle both sides of chicken with seasoning.
- Broil 6 to 7 minutes per side or until done. Drizzle with ¼ cup teriyaki sauce.
Side Dish Ingredients
- 1 lb asparagus, cut into 1-inch pieces
- 1 (8-oz) pkg sliced shiitake mushrooms (or use button mushrooms)
- 2 Tbsp dark sesame oil
- 1 clove garlic, minced
- ½ tsp kosher salt
- ½ tsp crushed red pepper
Side Dish Instructions
- Sauté asparagus and mushrooms in hot oil a large nonstick skillet over high heat 4 minutes or until crisp-tender. Stir in garlic, salt, and pepper. Cook 1 minute.
