Sheet Pan Teriyaki Shrimp with Broccoli and Bell Pepper

Ingredients

  • 3 Tbsp soy sauce
  • 1½ Tbsp mirin
  • 1½ Tbsp dark sesame oil
  • 1 Tbsp minced garlic
  • ½ Tbsp ginger paste
  • ½ Tbsp honey
  • 1 (12-oz) pkg broccoli florets
  • 1 red bell pepper, sliced
  • 1 lb peeled and deveined, large raw shrimp

Instructions

  1. Preheat oven to 450°F. Stir together soy sauce, mirin, oil, garlic, ginger paste, and honey.
  2. Toss together broccoli, bell pepper, and half of soy sauce mixture in a bowl. Toss together shrimp and remaining half of soy sauce mixture in a second bowl.
  3. Spread broccoli mixture in a single layer on a parchment paper-lined rimmed baking sheet. Bake 10 minutes.
  4. Add shrimp to baking sheet; bake 5 to 7 minutes longer or just until shrimp turn pink. Divide into 3 portions. Serve 2 portions. Refrigerate 1 portion up to 3 days.
