Chicken Spaghetti Casserole

Ingredients

  • 1 (16-oz) pkg spaghetti
  • 1½ lb boneless, skinless chicken breasts, cut into ½-inch pieces
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (12-oz) jar chicken gravy
  • 2 (10-oz) cans diced tomatoes and green chiles
  • 1 (8-oz) pkg shredded colby-Jack cheese
  • 1 sleeve round buttery crackers, crushed

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions; drain well.
  2. Meanwhile, cook chicken, onion, celery, and garlic in hot oil in a large, deep  nonstick skillet over medium-high heat until chicken is done and vegetables are tender.
  3. Stir in gravy, tomatoes and green chiles, cheese, and pasta; spoon into a lightly greased 13- x 9-inch baking dish. Sprinkle with crackers. Bake 25 to 30 minutes or until hot and bubbly.

  • 1 (12-oz) pkg frozen green beans
  • 2 Tbsp butter

Side Dish Instructions

  1. Steam green beans according to package directions; toss with butter, and season with salt and pepper to taste.
