Spaghetti with Chorizo and Pan-Roasted Tomatoes
Mixed Greens Caesar Salad
Ingredients
- 6 oz spaghetti (preferably whole wheat)
- ½ lb ground chorizo sausage
- 1 Tbsp minced garlic
- 2 pints grape tomatoes
- ½ tsp salt
- ¼ tsp crushed red pepper
- ½ cup white wine
- ¼ cup chopped fresh basil
- ½ cup freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook chorizo in a large nonstick skillet over medium-high heat 5 to 6 minutes or until browned and crumbly.
- Add garlic to skillet; cook 30 seconds or until fragrant. Add tomatoes, salt, and red pepper; cook 2 to 3 minutes or until tomatoes are about to burst. Add wine; cook 2 to 3 minutes or until slightly thickened. Stir in basil.
- Combine pasta and chorizo-tomato mixture; sprinkle with cheese. Garnish with additional basil leaves, if desired.
