Tuscan Pork Tenderloin

Green Beans with Almonds and Mashed Potatoes

Ingredients

  • 1 tsp dried crushed rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp minced garlic
  • 2 (1-lb) pork tenderloins, trimmed
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 425°F.
  2. Combine rosemary, oregano, salt, pepper and garlic; rub all over pork. Cook pork in hot oil in a large oven-safe skillet over medium-high heat 5 minutes per side.
  3. Transfer skillet to oven. Bake 15 minutes or until a meat thermometer registers 145°F. Let stand 5 minutes before slicing.

  • 2 (7.5-oz) pkg frozen green beans with almonds
  • 1 (32-oz) carton refrigerated mashed potatoes

  1. Cook green beans according to package directions.
  2. Heat potatoes according to package directions.
