Tuscan Pork Tenderloin
Green Beans with Almonds and Mashed Potatoes
Ingredients
- 1 tsp dried crushed rosemary
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp minced garlic
- 2 (1-lb) pork tenderloins, trimmed
- 2 Tbsp olive oil
Instructions
- Preheat oven to 425°F.
- Combine rosemary, oregano, salt, pepper and garlic; rub all over pork. Cook pork in hot oil in a large oven-safe skillet over medium-high heat 5 minutes per side.
- Transfer skillet to oven. Bake 15 minutes or until a meat thermometer registers 145°F. Let stand 5 minutes before slicing.

- 1 (32-oz) carton refrigerated mashed potatoes
