Flank Steak with Cilantro Sauce

Ingredients

  • 2 lb flank steak
  • 6 Tbsp avocado oil, divided
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 1 tsp ground cumin
  • 2 cloves garlic
  • 1½ cups chopped fresh cilantro
  • 3 Tbsp fresh lime juice
  • 1 tsp lime zest

Instructions

  1. Rub steak with 2 Tbsp oil; sprinkle with ½ tsp each salt and pepper. Cook steak in a large nonstick skillet over medium-high heat 7 to 8 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  2. Meanwhile, process ¼ cup oil, ½ tsp each salt and pepper, cumin, garlic, cilantro, lime juice, and lime zest in a blender or food processor until smooth. Scrape sides as needed. Serve cilantro sauce over steak.

Side Dish Ingredients

  • 2 (12-oz) pkg cauliflower florets
  • 2 Tbsp coconut oil
  • 1 cup unsweetened coconut milk
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Pulse cauliflower in a food processor, in batches, until it resembles rice.
  2. Melt oil in a large saucepan over medium heat; add cauliflower, and cook 4 minutes, stirring often. Stir in coconut milk, salt, and pepper. Cook 4 minutes or until creamy.
