Flank Steak with Cilantro Sauce
Coconut Cauli-Rice
Ingredients
- 2 lb flank steak
- 6 Tbsp avocado oil, divided
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 1 tsp ground cumin
- 2 cloves garlic
- 1½ cups chopped fresh cilantro
- 3 Tbsp fresh lime juice
- 1 tsp lime zest
Instructions
- Rub steak with 2 Tbsp oil; sprinkle with ½ tsp each salt and pepper. Cook steak in a large nonstick skillet over medium-high heat 7 to 8 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, process ¼ cup oil, ½ tsp each salt and pepper, cumin, garlic, cilantro, lime juice, and lime zest in a blender or food processor until smooth. Scrape sides as needed. Serve cilantro sauce over steak.

- 2 (12-oz) pkg cauliflower florets
- 2 Tbsp coconut oil
- 1 cup unsweetened coconut milk
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Pulse cauliflower in a food processor, in batches, until it resembles rice.
- Melt oil in a large saucepan over medium heat; add cauliflower, and cook 4 minutes, stirring often. Stir in coconut milk, salt, and pepper. Cook 4 minutes or until creamy.
