Tuna, Spinach, and Grape Salad

Ingredients

  • ½ cup raw pecans, chopped
  • 1 (10-oz) pkg baby spinach
  • 4 (5-oz) cans wild-caught albacore tuna, drained
  • 1 cup seedless red grapes, halved
  • 3 Tbsp extra virgin olive oil
  • 1½ Tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Toast nuts in a dry skillet over medium-high heat 2 to 4 minutes or until fragrant.
  2. Combine spinach, tuna, grapes, nuts, oil, lemon juice, salt, and pepper in a large bowl. Divide salad among 4 plates.
