Sparkling Mint LimeadeIngredients
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 2 (14.5-oz) cans BPA-free vegetarian chili
- 2 cups corn kernels
- 2 (9-oz) pkg whole-grain tortilla chips
- 1 (8-oz) block sharp Cheddar cheese, shredded
- 2 avocados, diced
- 1 (4-oz) can BPA-free sliced black olives, drained
- ¼ cup chopped fresh cilantro (or use flat-leaf parsley)
- 1 (8-oz) carton sour cream
Instructions
- Preheat oven to 350°F. Sauté onion and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until tender. Add chili and corn; cook 3 to 4 minutes or until thoroughly heated.
- Spread chips on a large rimmed baking sheet. Spoon chili mixture over chips. Top with cheese; bake 15 minutes or until cheese is melted.
- Sprinkle with avocados, olives, and cilantro. Serve with sour cream.
Side Dish Ingredients
- 30 fresh mint leaves
- ½ cup fresh lime juice
- 2 Tbsp honey
- 1 liter sparkling water, chilled
Side Dish Instructions
- Mash together mint, lime juice, and honey in a small pitcher; add desired amount of crushed ice. Pour sparkling water over mint mixture; serve immediately.
