Sheet Pan Roasted Fish with Broccoli and Tomatoes
Ingredients
- 2 (6-oz) cod fillets
- 2 Tbsp olive oil, divided
- 1 tsp Italian seasoning
- 1 cup halved grape tomatoes
- 1 crown broccoli, cut into florets
- 2 cloves garlic, minced
- 1 tsp lemon zest
- 1½ Tbsp fresh lemon juice
- 2 Tbsp chopped fresh basil
- ½ Tbsp honey
Instructions
- Preheat oven to 425°F. Place fish on a rimmed baking sheet. Drizzle with ½ Tbsp oil, and sprinkle with Italian seasoning. Season lightly with salt and pepper.
- Toss together tomatoes, broccoli, 1½ Tbsp oil, and garlic in a large bowl; season lightly with salt and pepper. Arrange tomato mixture around fish.
- Bake 15 to 20 minutes or until fish flakes with a fork.
- Meanwhile, stir together lemon zest, lemon juice, basil, and honey; drizzle over fish and tomato mixture.
