Baked Lemon and Garlic Tilapia

Ingredients

  • 6 Tbsp butter, softened
  • 3 cloves garlic, minced
  • 1 tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • ¼ tsp crushed red pepper
  • 6 tilapia fillets

Instructions

  1. Preheat oven to 400°F. Stir together butter, garlic, lemon zest, lemon juice, and red pepper.
  2. Place fish on a foil-lined rimmed baking sheet; season lightly with salt and pepper. Spread butter mixture over fish. Bake 10 to 15 minutes or until fish flakes with a fork.

  • 1 (16-oz) pkg orzo
  • 2 zucchini, thinly sliced
  • ¼ cup red wine vinegar
  • 2 Tbsp fresh lemon juice
  • 1 tsp honey
  • ½ cup olive oil
  • 1 pint grape tomatoes, halved
  • ¼ cup chopped fresh basil

Side Dish Instructions

  1. Cook pasta according to package directions, adding zucchini during last 2 minutes of cooking; drain and rinse with cold water.
  2. Meanwhile, whisk together vinegar, lemon juice, and honey in a large bowl. Add oil, whisking until blended. Stir in cooled pasta mixture, tomatoes, and basil.
