Grilled Greek Chicken Caesar Salad

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into 2-inch chunks
  • 1 Tbsp olive oil
  • 1 Tbsp Greek seasoning
  • 1 (3-count) pkg romaine lettuce hearts
  • 3 Roma tomatoes, chopped
  • 1 cucumber, cut into chunks
  • ½ red onion, thinly sliced
  • 1 (2.25-oz) can sliced black olives, drained
  • 1 (9-oz) pkg pita chips, slightly crushed
  • ½ (16-oz) bottle Caesar dressing

Instructions

  1. Preheat grill or grill pan to medium-high heat. Thread chicken onto 12 metal or bamboo skewers; brush with oil, and sprinkle with Greek seasoning. Grill chicken, covered, 6 to 7 minutes per side or until chicken is done.
  2. Meanwhile, chop lettuce, and toss with tomatoes, cucumber, onion, olives, and pita chips in a large bowl. Divide salad among 6 plates; drizzle with desired amount of dressing, and serve with chicken skewers.
