Caprese Gnocchi Gratin

Ingredients

  • 2 (1-lb) pkg whole wheat gnocchi
  • 2 Tbsp olive oil
  • 2 pints grape tomatoes
  • 2 cloves garlic, minced
  • 1 (24-oz) jar marinara sauce
  • 2 Tbsp balsamic vinegar
  • 1 (1-oz) pkg fresh basil, coarsely chopped
  • 2 (8-oz) pkg fresh mozzarella pearls

Instructions

  1. Preheat oven to 450°F.
  2. Cook gnocchi according to package directions; drain and keep warm.
  3. Meanwhile, heat oil in a saucepan over medium heat.
  4. Add tomatoes; cook 5 minutes or until tomatoes begin to burst.
  5. Add garlic; cook 30 seconds.
  6. Stir in marinara sauce, vinegar, gnocchi and basil.
  7. Spoon half of mixture into a greased 13-x 9-inch baking dish; top with half of mozzarella.
  8. Repeat layers once.
  9. Bake 10 minutes or until cheese is melted.

  • 2 lb fresh green beans, trimmed
  • 1½ Tbsp olive oil
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 Tbsp fresh lemon juice

Side Dish Instructions

  1. Preheat oven to 450°F. Toss beans with oil, salt, and pepper on a large rimmed baking sheet.
  2. Bake 8 to 10 minutes or until browned and crisp-tender.
  3. Drizzle with lemon juice; toss to combine.
