Frittata with Swiss Cheese and Greens

Ingredients

  • 2 slices bacon
  • 1 clove garlic, minced
  • ⅓ cup chopped onion
  • 3 cups super greens mix (arugula, chard, and spinach)
  • 4 large eggs, lightly beaten
  • 3 Tbsp milk
  • ¼ cup shredded Swiss cheese
  • ⅛ tsp kosher salt
  • ⅛ tsp pepper
  • ⅔ cup grape tomatoes

Instructions

  1. Preheat oven to 375°F. Cook bacon in a 6-inch ovenproof skillet over medium heat until crisp. Drain, reserving drippings in skillet. Crumble bacon.
  2. Add garlic and onions to hot drippings; sauté 3 minutes. Add greens; cook 1 minute or until wilted.
  3. Whisk together eggs, milk, cheese, salt, and pepper in a large bowl; gradually pour over kale mixture in skillet. Sprinkle with tomatoes.
  4. Transfer skillet to oven, and bake 20 minutes or until set and beginning to brown. Sprinkle with bacon.

Side Dish Instructions

  1. Chill strawberries until ready to serve.
