Chicken with Spicy Blackberry Salsa

Ingredients

  • ¾ lb boneless, skinless chicken breasts, halved lengthwise
  • 1½ Tbsp olive oil, divided
  • 1 Tbsp fresh lime juice
  • ½ Tbsp honey
  • 1 (6-oz) pkg blackberries
  • 1 Tbsp finely minced red onion
  • 1 Tbsp chopped fresh cilantro
  • ½ jalapeño pepper, seeded and minced

Instructions

  1. Sprinkle chicken lightly with salt and pepper. Cook in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet.
  2. Whisk together lime juice, honey, and ½ Tbsp oil in a bowl. Add blackberries, onion, cilantro, jalapeño, and salt and pepper to taste; toss. Serve salsa over chicken.

Side Dish Ingredients

  • ½ (5-oz) pkg arugula
  • 1 Tbsp extra virgin olive oil
  • ½ Tbsp fresh lemon juice
  • 2 Tbsp crumbled goat cheese

Side Dish Instructions

  1. Toss together arugula, oil, and lemon juice in a bowl. Top with cheese.
