Chicken with Spicy Blackberry Salsa
Arugula and Goat Cheese Salad
Ingredients
- ¾ lb boneless, skinless chicken breasts, halved lengthwise
- 1½ Tbsp olive oil, divided
- 1 Tbsp fresh lime juice
- ½ Tbsp honey
- 1 (6-oz) pkg blackberries
- 1 Tbsp finely minced red onion
- 1 Tbsp chopped fresh cilantro
- ½ jalapeño pepper, seeded and minced
Instructions
- Sprinkle chicken lightly with salt and pepper. Cook in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet.
- Whisk together lime juice, honey, and ½ Tbsp oil in a bowl. Add blackberries, onion, cilantro, jalapeño, and salt and pepper to taste; toss. Serve salsa over chicken.
Side Dish Ingredients
- ½ (5-oz) pkg arugula
- 1 Tbsp extra virgin olive oil
- ½ Tbsp fresh lemon juice
- 2 Tbsp crumbled goat cheese
Side Dish Instructions
- Toss together arugula, oil, and lemon juice in a bowl. Top with cheese.
