Cheesy Mexican Chicken Skillet

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ½ (8-oz) pouch mild red chile enchilada sauce (such as Frontera)
  • ½ cup shredded Mexican-blend cheese (or use Cheddar)
  • 1 small avocado, thinly sliced
  • 1 small tomato, chopped
  • 3 Tbsp chopped fresh cilantro
  • ¼ cup sour cream

Instructions

  1. Cook chicken in hot oil in a nonstick skillet over medium-high heat 2 to 3 minutes per side or until browned. Add sauce; cover and cook 3 to 4 minutes or until bubbly and chicken is done.
  2. Sprinkle chicken with cheese; cover and cook 1 to 2 minutes or until cheese is melted. Top with avocado, tomato, and cilantro. Serve with sour cream.
