Steak Flatbreads with Harissa-Cucumber Sauce
Mint and Zucchini "Noodle" Salad
Ingredients
- 1 (15-oz) pkg ancient grain pizza crusts (such as Brooklyn Bred)
- 1¼ lb top sirloin steak (about 1-inch thick)
- ½ tsp kosher salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 cup tzatziki yogurt dip
- ½ cup crumbled feta cheese
- 2 Tbsp harissa seasoning blend (such as Frontier Organic)
- ½ tsp ground cumin
- 1 (5-oz) pkg arugula
Instructions
- Preheat oven to 400°F. Bake crusts 10 to 12 minutes or until crisp.
- Meanwhile, sprinkle steak with salt and pepper. Cook in hot oil in skillet 5 minutes per side or to desired doneness. Let stand 5 minutes. Thinly slice across the grain.
- Combine dip, cheese, harissa, and cumin. Spread yogurt mixture over crusts; top with steak and arugula.
Side Dish Ingredients
- 2 Tbsp extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 1 Tbsp minced garlic
- ¼ cup chopped fresh mint
- ½ tsp kosher salt
- ½ tsp pepper
- 2 (10.7-oz) pkg zucchini noodles (such as Veggie Noodle Co.)
Side Dish Instructions
- Combine oil, lemon juice, garlic, mint, salt, and pepper in a large bowl; add zucchini, and toss. Let stand at least 10 minutes before serving.
