Grilled Teriyaki Chicken Skewers
Baby Bok Choy with Rice NoodlesIngredients
- ¼ cup low-sodium soy sauce
- 2 Tbsp honey
- 1 Tbsp ginger paste
- 2 Tbsp sesame oil
- 2 lb chicken tenderloins
- ¼ cup chopped fresh cilantro
- 1 Tbsp toasted sesame seeds
Instructions
- Preheat grill to medium-high heat. Combine soy sauce, honey, ginger paste, and 1 Tbsp oil. Toss chicken with 1 Tbsp oil; thread each chicken tenderloin onto an 8-inch metal or bamboo skewer.
- Grill chicken, covered, 3 to 4 minutes per side or until done, basting with soy sauce mixture. Sprinkle with cilantro and sesame seeds.
Side Dish Ingredients
- ¼ cup sesame oil
- 2 Tbsp rice vinegar
- 6 heads baby bok choy, halved
- 1 red bell pepper, halved and seeded
- ½ tsp kosher salt
- ¼ tsp crushed red pepper
- 1 (8-oz) pkg rice noodles
- ¼ cup chopped fresh cilantro
- 1 tsp ginger paste
Side Dish Instructions
- Preheat grill to medium-high heat. Brush oil and vinegar over bok choy and bell pepper; sprinkle with salt and red pepper.
- Grill bok choy and bell pepper, covered, 2 minutes per side or until lightly browned. Coarsely chop bell pepper.
- Meanwhile, cook noodles according to package directions. Combine noodles, bell pepper, cilantro, and ginger paste. Serve with bok choy.
