Chicken and Sweet Potato Chili

Ingredients

  • 3 cups shredded rotisserie chicken
  • 3 (14.5-oz) cans diced tomatoes with green peppers and onion
  • 2 (15-oz) cans pinto beans, drained and rinsed
  • 6 cups low-sodium chicken broth
  • 2 (16-oz) pkg peeled, cubed sweet potatoes
  • 4 Tbsp minced garlic
  • 2 Tbsp chili powder
  • 2 tsp ground cumin

Instructions

  1. Combine all ingredients in a large Dutch oven. Bring to a boil; reduce heat, and simmer 20 minutes or until potatoes are tender.

Side Dish Ingredients

  • 2 (5-oz) pkg mixed baby greens
  • 1 mango, thinly sliced
  • 3 radishes, thinly sliced
  • ¼ cup roasted, salted pepitas (pumpkin seeds)
  • ⅓ cup lime-cilantro vinaigrette (such as Sam's Choice)
  • ½ cup crumbled cotija cheese

Side Dish Instructions

  1. Combine greens, mango, radishes, and seeds in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
