Orzo, Chickpea, and Spinach Salad

Ingredients

  • 1 (16-oz) pkg vegan orzo
  • ¼ cup olive oil
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 1 (10-oz) pkg baby spinach, coarsely chopped
  • 1 pint grape tomatoes, halved
  • 1 (2.25-oz) can sliced black olives, drained
  • ¼ cup pine nuts, toasted (see note)
  • ¼ cup fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook orzo according to package directions.
  2. Transfer orzo to a large bowl, and toss with oil. Add chickpeas and remaining ingredients; toss gently.
