Orzo, Chickpea, and Spinach Salad
Ingredients
- 1 (16-oz) pkg vegan orzo
- ¼ cup olive oil
- 2 (15-oz) cans chickpeas, drained and rinsed
- 1 (10-oz) pkg baby spinach, coarsely chopped
- 1 pint grape tomatoes, halved
- 1 (2.25-oz) can sliced black olives, drained
- ¼ cup pine nuts, toasted (see note)
- ¼ cup fresh lemon juice
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook orzo according to package directions.
- Transfer orzo to a large bowl, and toss with oil. Add chickpeas and remaining ingredients; toss gently.
