Vietnamese Meatballs
Sesame-Ginger Carrot-Radish Slaw
Ingredients
- 1¼ lb ground pork
- 2 Tbsp chopped green onion
- 5 Tbsp low-sodium soy sauce, divided
- 2 tsp lemongrass paste
- 2 tsp ginger paste
- ¼ tsp salt
- ½ tsp pepper
- 1½ Tbsp sesame oil, divided
- 2 Tbsp fresh lime juice
- 1 Tbsp honey
Instructions
- Combine pork, onion, 1 Tbsp soy sauce, lemongrass paste, ginger paste, salt, and pepper; roll mixture into 1-inch balls.
- Cook meatballs in 1 Tbsp hot oil in a large skillet over medium-high heat 12 to 15 minutes or until centers are no longer pink, turning occasionally.
- Meanwhile, whisk together 4 Tbsp soy sauce, ½ Tbsp oil, lime juice, and honey. Add to skillet; cook 2 to 3 minutes or until meatballs are done and coated with sauce.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw
- 4 radishes, sliced
- ¼ cup chopped fresh cilantro
- ⅓ cup low-fat sesame-ginger dressing (such as Newman's Own)
- ¼ cup chopped dry roasted, salted peanuts
Side Dish Instructions
- Combine slaw, radishes, cilantro, and dressing in a bowl; top with nuts.
