Sesame-Ginger Carrot-Radish Slaw

Ingredients

  • 1¼ lb ground pork
  • 2 Tbsp chopped green onion
  • 5 Tbsp low-sodium soy sauce, divided
  • 2 tsp lemongrass paste
  • 2 tsp ginger paste
  • ¼ tsp salt
  • ½ tsp pepper
  • 1½ Tbsp sesame oil, divided
  • 2 Tbsp fresh lime juice
  • 1 Tbsp honey

Instructions

  1. Combine pork, onion, 1 Tbsp soy sauce, lemongrass paste, ginger paste, salt, and pepper; roll mixture into 1-inch balls.
  2. Cook meatballs in 1 Tbsp hot oil in a large skillet over medium-high heat 12 to 15 minutes or until centers are no longer pink, turning occasionally.
  3. Meanwhile, whisk together 4 Tbsp soy sauce, ½ Tbsp oil, lime juice, and honey. Add to skillet; cook 2 to 3 minutes or until meatballs are done and coated with sauce.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw
  • 4 radishes, sliced
  • ¼ cup chopped fresh cilantro
  • ⅓ cup low-fat sesame-ginger dressing (such as Newman's Own)
  • ¼ cup chopped dry roasted, salted peanuts

Side Dish Instructions

  1. Combine slaw, radishes, cilantro, and dressing in a bowl; top with nuts.
