Prosciutto-Wrapped Chicken with Tomato-Stone Fruit Salad

Ingredients
- 2 (6-oz) boneless, skinless chicken breasts
- 2 thin slices prosciutto
- 1 Tbsp olive oil, divided
- 1 heirloom tomato, cut into wedges
- 1 peach, cut into wedges
- 1 plum, cut into wedges
- 1 Tbsp balsamic glaze
- 1½ Tbsp crumbled goat cheese
- 1 Tbsp torn fresh basil
Instructions
- Sprinkle chicken lightly with salt and pepper. Wrap 1 prosciutto slice around each breast.
- Cook chicken in ½ Tbsp hot oil in a large skillet over medium heat 5 minutes per side or until done. Remove from skillet; keep warm.
- Arrange tomato, peach, and plum wedges on a platter; drizzle with ½ Tbsp oil and balsamic glaze. Sprinkle with cheese and basil. Serve with chicken.
