Bird Dog Sandwiches

Ingredients

  • 3 slices bacon, chopped
  • 3 large deli fried chicken fingers (about ¾ lb)
  • 2 to 3 hot dog buns, toasted
  • ½ cup shredded colby-Jack cheese
  • 2 Tbsp honey mustard (see Note)

Instructions

  1. Preheat oven to 400°F. Cook bacon in a skillet over medium heat until crisp; drain on paper towels.
  2. Place chicken fingers on a baking sheet; bake 5 to 10 minutes or just until heated.
  3. Sprinkle buns with half of bacon; top with chicken, cheese, and remaining bacon.
  4. Return to baking sheet, and bake 2 minutes or until cheese is melted. Drizzle with honey mustard before serving.

Side Dish Ingredients

  • ½ (22-oz) pkg frozen waffle fries
  • 2 (4-oz) cups cherry mixed fruit in juice

Side Dish Instructions

  1. Bake fries according to package directions.
