Grilled Chicken with Pistachio Romesco Sauce

Ingredients

  • 3 (6-oz) boneless, skinless chicken breasts
  • 1 red bell pepper, halved
  • 1 Roma tomato, halved
  • 2 Tbsp olive oil, divided
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 large clove garlic, peeled
  • 3 Tbsp roasted, salted shelled pistachios
  • 1 Tbsp sherry vinegar
  • 1 tsp smoked paprika

Instructions

  1. Preheat grill to medium-high heat. Brush chicken, bell pepper, and tomato with 1 Tbsp oil; sprinkle with ¼ tsp each salt and pepper.
  2. Grill chicken, covered, 4 to 5 minutes per side or until done. Grill bell pepper and tomato, covered, 1 to 3 minutes per side or until well marked.
  3. Process bell pepper, tomato, garlic, nuts, vinegar, paprika, 1 Tbsp oil, and ¼ tsp each salt and pepper in a food processor or blender until smooth. Slice chicken, and serve with sauce.

  • 1 (8.5-oz) pouch microwavable seven whole-grains mix (such as Seeds of Change)
  • 2 cups arugula
  • 1 cup cannellini beans, drained and rinsed
  • 2 Tbsp thinly sliced red onion
  • 1 Tbsp extra virgin olive oil
  • ½ Tbsp fresh lemon juice
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook whole-grains mix according to package directions. Transfer to a bowl; toss with arugula and remaining ingredients.
