Cheesy Turkey Spaghetti Casserole

Ingredients

  • 8 oz whole grain penne pasta
  • 1 tsp canola oil
  • 12 oz sliced mushrooms
  • 2 zucchini, sliced
  • 1 lb ground turkey
  • 1 (24-oz) jar low-sodium spaghetti sauce (such as Prego Heart Healthy)
  • 1 Tbsp sugar
  • 1½ tsp garlic salt
  • ¼ tsp crushed red pepper
  • ½ cup chopped fresh basil
  • 1½ cups 2% reduced-fat cottage cheese
  • 1 (8-oz) pkg shredded part skim mozzarella cheese
  • ⅓ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F.
  2. Cook pasta according to package directions; drain.
  3. Meanwhile, heat oil in large nonstick skillet over medium-high heat. Add mushrooms to pan; cook 4 minutes. Add zucchini to pan; cook 7 minutes; and set mushroom mixture aside on plate.
  4. Add turkey to pan; cook until browned. Add spaghetti sauce, sugar, garlic salt and crushed red pepper; cook 5 minutes.
  5. Combine cottage cheese, basil and Parmesan cheese in a small bowl.
  6. Spoon half of the pasta on bottom of 13-inch by 9-inch baking pan; top with ⅓ cup of the spaghetti sauce,½ of zucchini mixture, ½ of cottage cheese mixture and ⅓ of mozzarella cheese; repeat layers.
  7. Top with remaining spaghetti sauce and mozzarella cheese; cover and bake 45 minutes or until bubbly.
  8. Divide half of the casserole among 6 servings; refrigerate remaining lasagna to serve later in the week or freeze for up to 3 months.

  • 3 oranges, peeled and sectioned
  • 3 firm pears, chopped
  • 2 Tbsp lime juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
