Ham and Spinach Frittata

Ingredients

  • 12 large eggs
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 6 green onions, diced
  • 3 cloves garlic, minced
  • 1 (10-oz) pkg spinach
  • 1 cup shredded reduced-fat Monterey Jack cheese
  • ½ (16-oz) pkg diced ham, well drained

Instructions

  1. Preheat oven to 350°F. Beat eggs lightly in a large bowl.
  2. Melt butter with oil in a 10-inch ovenproof skillet. Add onions and garlic; cook 2 minutes. Gradually stir in spinach until wilted and all liquid is evaporated.
  3. Pour egg mixture over spinach; stir in cheese and ham. Transfer skillet to oven, and bake 20 to 25 minutes or until center is set.

Side Dish Ingredients

  • 6 cups cubed cantaloupe
  • 1 (16-oz) pkg strawberries, cut in half
  • 2 Tbsp fresh lemon juice

Side Dish Instructions

  1. Divide cantaloupe and strawberries among 6 bowls. Drizzle with lemon juice.
