Ham and Spinach Frittata
Strawberry and Melon SaladIngredients
- 12 large eggs
- 1 Tbsp butter
- 1 Tbsp olive oil
- 6 green onions, diced
- 3 cloves garlic, minced
- 1 (10-oz) pkg spinach
- 1 cup shredded reduced-fat Monterey Jack cheese
- ½ (16-oz) pkg diced ham, well drained
Instructions
- Preheat oven to 350°F. Beat eggs lightly in a large bowl.
- Melt butter with oil in a 10-inch ovenproof skillet. Add onions and garlic; cook 2 minutes. Gradually stir in spinach until wilted and all liquid is evaporated.
- Pour egg mixture over spinach; stir in cheese and ham. Transfer skillet to oven, and bake 20 to 25 minutes or until center is set.
Side Dish Ingredients
- 6 cups cubed cantaloupe
- 1 (16-oz) pkg strawberries, cut in half
- 2 Tbsp fresh lemon juice
Side Dish Instructions
- Divide cantaloupe and strawberries among 6 bowls. Drizzle with lemon juice.
