Chicken Thighs with Peanut Sauce

Ingredients

  • 6 Tbsp low-sodium soy sauce, divided
  • 3 Tbsp honey, divided
  • 1 Tbsp sesame oil
  • 3 Tbsp minced garlic
  • 2 lb boneless, skinless chicken thighs
  • ¼ cup chopped fresh cilantro
  • 6 Tbsp warm water
  • 6 Tbsp creamy peanut butter
  • ¾ tsp crushed red pepper

Instructions

  1. Preheat broiler. Combine 5 Tbsp soy sauce, 2 Tbsp honey, oil, and garlic; brush over chicken on a foil-lined baking sheet. Broil on top oven rack 8 to 10 minutes per side or until done.
  2. Combine cilantro, water, peanut butter, 1 Tbsp soy sauce, 1 Tbsp honey, and red pepper. Serve sauce with chicken.

  • 1 (13.6-oz) pkg chopped Asian sesame salad kit (such as Dole)
  • 1 English cucumber, sliced
  • ¼ cup chopped fresh cilantro
