Apple-Infused Pork Roast
Garlic-Rosemary Roasted Brussels Sprouts
Ingredients
- 1½ lb boneless pork loin roast, cut into 2-inch pieces
- 1 Tbsp almond flour
- 2 Tbsp avocado oil
- ¼ cup organic chicken broth
- 1 red apple, sliced
- 1 onion, chopped
- 1 clove garlic, minced
- ½ tsp chili powder
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Toss pork with flour, and sprinkle lightly with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Remove from skillet. Add broth to skillet, scraping skillet to loosen browned bits.
- Place apple and remaining ingredients in a 4-quart slow cooker. Place browned pork over apple mixture in cooker. Pour broth over pork.
- Cover and cook on LOW 7 hours or until pork is tender.
Side Dish Ingredients
- 1 lb Brussels sprouts, halved
- 1 Tbsp avocado oil
- 1 clove garlic, minced
- ½ Tbsp chopped fresh rosemary
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together Brussels sprouts, oil, garlic, rosemary, salt, and pepper on a large rimmed baking sheet. Bake 15 minutes or until browned, stirring once.
