Apple-Infused Pork Roast

Garlic-Rosemary Roasted Brussels Sprouts

Ingredients

  • 1½ lb boneless pork loin roast, cut into 2-inch pieces
  • 1 Tbsp almond flour
  • 2 Tbsp avocado oil
  • ¼ cup organic chicken broth
  • 1 red apple, sliced
  • 1 onion, chopped
  • 1 clove garlic, minced
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Toss pork with flour, and sprinkle lightly with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Remove from skillet. Add broth to skillet, scraping skillet to loosen browned bits.
  2. Place apple and remaining ingredients in a 4-quart slow cooker. Place browned pork over apple mixture in cooker. Pour broth over pork.
  3. Cover and cook on LOW 7 hours or until pork is tender.

Side Dish Ingredients

  • 1 lb Brussels sprouts, halved
  • 1 Tbsp avocado oil
  • 1 clove garlic, minced
  • ½ Tbsp chopped fresh rosemary
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together Brussels sprouts, oil, garlic, rosemary, salt, and pepper on a large rimmed baking sheet. Bake 15 minutes or until browned, stirring once.
