Cheeseburger Shepherd's Pie
Wedge Salad with Garlic-Lemon DressingIngredients
- 1½ lb ground beef
- ½ cup chopped onion
- 2 cloves garlic, minced
- 1 (15-oz) can tomato sauce
- 1 (12-oz) pkg frozen whole kernel corn
- ½ cup chopped dill pickles
- ¼ cup yellow mustard
- 1 Tbsp Montreal steak seasoning
- 1 (8-oz) pkg four-cheese mashed potatoes
- 1 cup shredded Cheddar cheese
Instructions
- Preheat oven to 350°F. Cook beef, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
- Stir in tomato sauce, corn, pickles, mustard, and steak seasoning. Cook, stirring often, 10 minutes. Spoon into a lightly greased 2-quart baking dish.
- Prepare potatoes according to package directions; dollop over meat mixture. Bake 15 minutes; sprinkle with cheese, and bake 10 minutes longer.
Side Dish Ingredients
- 3 Tbsp fresh lemon juice
- 3 Tbsp olive oil
- 1 clove garlic, minced
- 1 tsp honey
- 1 tsp Dijon mustard
- 1 head iceberg lettuce, cut into 6 wedges
- 2 Roma tomatoes, chopped
- 1 (5-oz) pkg seasoned croutons
Side Dish Instructions
- Whisk together lemon juice, oil, garlic, honey, mustard, and desired amount of salt and pepper. Divide lettuce wedges among 6 plates. Top with tomatoes, and drizzle with dressing. Sprinkle with croutons.
