Smothered Tex-Mex Sandwiches
Chipotle-Cilantro FriesIngredients
- 1½ lb ground beef
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 (28-oz) can enchilada sauce
- 6 bolillo rolls
- 1 (15-oz) can refried beans
- 1 (8-oz) container guacamole
- ½ (12-oz) pkg queso fresco, crumbled
Instructions
- Cook beef, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Add enchilada sauce, and cook, stirring often, until thoroughly heated.
- Preheat broiler. Split rolls in half lengthwise, and place, cut sides up, on a baking sheet. Broil rolls until toasted.
- Meanwhile, heat beans according to package directions; spread beans on cut sides of rolls. Fill with meat mixture, dollop with guacamole, and sprinkle with cheese. Serve immediately.

- 1 (32-oz) pkg frozen crinkle-cut French fries
- 2 Tbsp olive oil
- ¼ cup chopped fresh cilantro
- 1 tsp ground chipotle chile pepper
Side Dish Instructions
- Bake fries according to package directions. Toss with oil, cilantro, and chile pepper. Season with salt and pepper to taste.
