Smothered Tex-Mex Sandwiches

Chipotle-Cilantro Fries

Ingredients

  • 1½ lb ground beef
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 (28-oz) can enchilada sauce
  • 6 bolillo rolls
  • 1 (15-oz) can refried beans
  • 1 (8-oz) container guacamole
  • ½ (12-oz) pkg queso fresco, crumbled

Instructions

  1. Cook beef, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Add enchilada sauce, and cook, stirring often, until thoroughly heated.
  2. Preheat broiler. Split rolls in half lengthwise, and place, cut sides up, on a baking sheet. Broil rolls until toasted.
  3. Meanwhile, heat beans according to package directions; spread beans on cut sides of rolls. Fill with meat mixture, dollop with guacamole, and sprinkle with cheese. Serve immediately.

  • 1 (32-oz) pkg frozen crinkle-cut French fries
  • 2 Tbsp olive oil
  • ¼ cup chopped fresh cilantro
  • 1 tsp ground chipotle chile pepper

Side Dish Instructions

  1. Bake fries according to package directions. Toss with oil, cilantro, and chile pepper. Season with salt and pepper to taste.
