Fall Mixed-Greens-and-Grain Salad with Chicken
Ingredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- ½ tsp ground cumin
- 1 tsp salt
- 1 tsp pepper
- 2 Tbsp olive oil
- 2 (8.5-oz) pouches microwavable seven whole-grains mix (such as Seeds of Change)
- 2 (5-oz) pkg mixed greens
- 3 red pears, sliced
- ⅓ cup olive oil vinaigrette
- ½ cup crumbled goat cheese
Instructions
- Rub chicken with cumin, salt, and pepper. Cook chicken, in batches, in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until browned and done.
- Meanwhile, heat grains mix according to package directions. Toss warm grains with greens, pears, and vinaigrette.
- Slice chicken crosswise. Place rice mixture in 6 bowls; top with chicken and cheese.
