Fall Mixed-Greens-and-Grain Salad with Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp ground cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 2 Tbsp olive oil
  • 2 (8.5-oz) pouches microwavable seven whole-grains mix (such as Seeds of Change)
  • 2 (5-oz) pkg mixed greens
  • 3 red pears, sliced
  • ⅓ cup olive oil vinaigrette
  • ½ cup crumbled goat cheese

Instructions

  1. Rub chicken with cumin, salt, and pepper. Cook chicken, in batches, in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until browned and done.
  2. Meanwhile, heat grains mix according to package directions. Toss warm grains with greens, pears, and vinaigrette.
  3. Slice chicken crosswise. Place rice mixture in 6 bowls; top with chicken and cheese.
