Salmon with Roasted Balsamic Grapes
Lemon-Garlic Green Beans
Ingredients
- 1 (2-lb) wild-caught salmon fillet
- 3 Tbsp olive oil, divided
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 4 cups seedless red grapes
- 1 cup thinly sliced red onion
- 12 sprigs fresh thyme
- 3 Tbsp balsamic vinegar
- 1 Tbsp honey
Instructions
- Preheat oven to 425°F. Place fish on a parchment paper-lined large rimmed baking sheet; drizzle with 1 Tbsp oil, and sprinkle with ½ tsp each salt and pepper.
- Combine grapes, onion, thyme, 2 Tbsp oil, vinegar, honey, and ½ tsp each salt and pepper; arrange around fish in a single layer.
- Bake 15 minutes or until fish flakes with a fork and grapes are roasted.

- 3 (8-oz) pkg thin green beans
- 2 Tbsp minced garlic
- 2 Tbsp olive oil
- ½ tsp lemon zest
- 1 Tbsp fresh lemon juice
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Toss beans and garlic with oil in a roasting pan. Bake 10 to 12 minutes.
- Toss hot cooked beans with lemon zest, lemon juice, salt, and pepper.
