Salmon with Roasted Balsamic Grapes

Ingredients

  • 1 (2-lb) wild-caught salmon fillet 
  • 3 Tbsp olive oil, divided
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 4 cups seedless red grapes
  • 1 cup thinly sliced red onion
  • 12 sprigs fresh thyme
  • 3 Tbsp balsamic vinegar
  • 1 Tbsp honey

Instructions

  1. Preheat oven to 425°F. Place fish on a parchment paper-lined large rimmed baking sheet; drizzle with 1 Tbsp oil, and sprinkle with ½ tsp each salt and pepper.
  2. Combine grapes, onion, thyme, 2 Tbsp oil, vinegar, honey, and ½ tsp each salt and pepper; arrange around fish in a single layer.
  3. Bake 15 minutes or until fish flakes with a fork and grapes are roasted.

  • 3 (8-oz) pkg thin green beans
  • 2 Tbsp minced garlic
  • 2 Tbsp olive oil
  • ½ tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss beans and garlic with oil in a roasting pan. Bake 10 to 12 minutes.
  2. Toss hot cooked beans with lemon zest, lemon juice, salt, and pepper.
