Cast-Iron Carne Asada Tacos

Ingredients

  • 1½ lb flank steak
  • 3 Tbsp Mexican seasoning (such as McCormick Perfect Pinch), divided
  • ½ tsp kosher salt, divided
  • ¼ cup olive oil, divided
  • 2 (12-oz) pkg sliced bell pepper and onion medley
  • 4 cloves garlic, minced
  • 2 Tbsp fresh lime juice
  • 12 soft taco-size corn tortillas, heated
  • 1 cup fresh salsa

Instructions

  1. Sprinkle steak with 1 Tbsp seasoning and ¼ tsp salt. Cook in 2 Tbsp hot oil in a large cast-iron skillet over medium-high heat 6 to 8 minutes per side or to desired doneness. Let stand 10 minutes before slicing across the grain.
  2. Meanwhile, cook bell pepper medley, garlic, 2 Tbsp seasoning, and ¼ tsp salt in 2 Tbsp hot oil in skillet 6 to 8 minutes or until browned and tender.
  3. Add steak and lime juice; cook 1 minute, stirring to blend. Serve in tortillas with salsa.

  • ½ cup chopped red onion
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp fresh lime juice
  • 1 tsp Mexican seasoning (such as McCormick Perfect Pinch)
  • ½ tsp kosher salt

Side Dish Instructions

  1. Cook rice according to package directions. Toss together rice and remaining ingredients.
