Cast-Iron Carne Asada Tacos
Mexican Rice
Ingredients
- 1½ lb flank steak
- 3 Tbsp Mexican seasoning (such as McCormick Perfect Pinch), divided
- ½ tsp kosher salt, divided
- ¼ cup olive oil, divided
- 2 (12-oz) pkg sliced bell pepper and onion medley
- 4 cloves garlic, minced
- 2 Tbsp fresh lime juice
- 12 soft taco-size corn tortillas, heated
- 1 cup fresh salsa
Instructions
- Sprinkle steak with 1 Tbsp seasoning and ¼ tsp salt. Cook in 2 Tbsp hot oil in a large cast-iron skillet over medium-high heat 6 to 8 minutes per side or to desired doneness. Let stand 10 minutes before slicing across the grain.
- Meanwhile, cook bell pepper medley, garlic, 2 Tbsp seasoning, and ¼ tsp salt in 2 Tbsp hot oil in skillet 6 to 8 minutes or until browned and tender.
- Add steak and lime juice; cook 1 minute, stirring to blend. Serve in tortillas with salsa.

- 2 (8.8-oz) pouches microwavable brown rice
- ½ cup chopped red onion
- ¼ cup chopped fresh cilantro
- 2 Tbsp fresh lime juice
- 1 tsp Mexican seasoning (such as McCormick Perfect Pinch)

Side Dish Instructions
- Cook rice according to package directions. Toss together rice and remaining ingredients.
