Ham and Spinach Frittata
Mixed Greens with Lime Dressing
Ingredients
- 12 large eggs
- 2 Tbsp butter
- 2 Tbsp olive oil
- 6 green onions, diced
- 3 cloves garlic, minced
- 1 (10-oz) pkg spinach
- 1 cup shredded Monterey Jack cheese
- 1 (8-oz) pkg diced ham, well drained
Instructions
- Preheat oven to 350°F. Beat eggs lightly in a large bowl.
- Melt butter with oil in a 10-inch ovenproof skillet. Add onions and garlic; cook 2 minutes. Gradually stir in spinach until wilted and all liquid is evaporated.
- Pour egg mixture over spinach; stir in cheese and ham. Transfer skillet to oven, and bake 20 to 25 minutes or until center is set.
Side Dish Ingredients
- ¼ cup fresh lime juice
- ¼ cup extra virgin olive oil
- 1½ Tbsp honey
- 2 tsp Dijon mustard
- ½ tsp salt
- ½ tsp pepper
- 2 (5-oz) pkg spring mix
Side Dish Instructions
- Whisk together lime juice, oil, honey, mustard, salt, and pepper. Drizzle greens with lime mixture. Toss.
