Mediterranean Chicken-and-Bulgur Salad
Warmed Whole Wheat Pita Rounds
Ingredients
- ½ cup bulgur wheat
- 2 cups shredded rotisserie chicken (without skin)
- 4 green onions, thinly sliced
- ½ cup chopped fresh flat-leaf parsley
- ½ cup chopped fresh mint
- 2 tomatoes, diced
- ½ seedless cucumber, diced
- 2 Tbsp extra virgin olive oil
- 2 Tbsp fresh lemon juice
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Cook bulgur according to package directions.
- Combine bulgur, chicken, green onions, parsley, mint, tomatoes, cucumber, olive oil, lemon juice, salt, and pepper; toss. Cover and chill 1 hour before serving.

- 2 (3-oz) whole wheat pita bread rounds, cut into quarters

- Wrap pitas with a moist paper towel. Microwave at HIGH 20 seconds.
