Mediterranean Chicken-and-Bulgur Salad

Ingredients

  • ½ cup bulgur wheat
  • 2 cups shredded rotisserie chicken (without skin)
  • 4 green onions, thinly sliced
  • ½ cup chopped fresh flat-leaf parsley
  • ½ cup chopped fresh mint
  • 2 tomatoes, diced
  • ½ seedless cucumber, diced
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Cook bulgur according to package directions.
  2. Combine bulgur, chicken, green onions, parsley, mint, tomatoes, cucumber, olive oil, lemon juice, salt, and pepper; toss. Cover and chill 1 hour before serving.

  • 2 (3-oz) whole wheat pita bread rounds, cut into quarters

Side Dish Instructions

  1. Wrap pitas with a moist paper towel. Microwave at HIGH 20 seconds.
