Ham and Spinach Frittata
Mixed Greens with Lime DressingIngredients
- 6 large eggs
- 1 Tbsp butter
- 1 Tbsp olive oil
- 2 green onions, diced
- 2 cloves garlic, minced
- ½ (10-oz) pkg spinach
- 1 cup shredded Monterey Jack cheese
- 1 (8-oz) pkg diced ham, well drained
Instructions
- Preheat oven to 350°F. Beat eggs lightly in a large bowl; season lightly with salt and pepper.
- Melt butter with oil in an 8-inch ovenproof skillet. Add onions and garlic; cook 2 minutes. Gradually stir in spinach until wilted and liquid is evaporated.
- Pour egg mixture over spinach; stir in cheese and ham. Transfer skillet to oven, and bake 20 minutes or until center is set.
Side Dish Ingredients
- 1 Tbsp fresh lime juice
- 1 Tbsp extra virgin olive oil
- 1 tsp honey
- ½ tsp Dijon mustard
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ (5-oz) pkg spring mix
Side Dish Instructions
- Whisk together lime juice, oil, honey, mustard, salt, and pepper. Drizzle lime mixture on greens in a bowl. Toss.
