Ham and Spinach Frittata

Mixed Greens with Lime Dressing


  • 6 large eggs
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 2 green onions, diced
  • 2 cloves garlic, minced
  • ½ (10-oz) pkg spinach
  • 1 cup shredded Monterey Jack cheese
  • 1 (8-oz) pkg diced ham, well drained


  1. Preheat oven to 350°F. Beat eggs lightly in a large bowl; season lightly with salt and pepper.
  2. Melt butter with oil in an 8-inch ovenproof skillet. Add onions and garlic; cook 2 minutes. Gradually stir in spinach until wilted and liquid is evaporated.
  3. Pour egg mixture over spinach; stir in cheese and ham. Transfer skillet to oven, and bake 20 minutes or until center is set.

Side Dish Ingredients

  • 1 Tbsp fresh lime juice
  • 1 Tbsp extra virgin olive oil
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ (5-oz) pkg spring mix

Side Dish Instructions

  1. Whisk together lime juice, oil, honey, mustard, salt, and pepper. Drizzle lime mixture on greens in a bowl. Toss.
